Description
Delicious cream cheese stuffed peppers filled with seasoned ground beef, perfect as an appetizer or main dish.

- 3–4 bell peppers, halved and seeds removed
- 1 lb ground beef
- 1 block cream cheese
- 1 can Rotel (diced tomatoes with green chilies)
- 1 tablespoon garlic powder
- 1 onion, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cut the bell peppers in half, removing the seeds and membranes.
- In a pan over medium heat, brown the ground beef until fully cooked. Add the chopped onion and sauté until the onion is translucent.
- Add garlic powder, salt, and pepper to the beef and onion mixture. Stir well.
- Add the cubed cream cheese to the beef mixture and stir until melted and incorporated.
- Pour the can of Rotel into the pan and let it simmer until heated through.
- Spoon the cream cheese and beef mixture into the halved bell peppers.
- Place the stuffed peppers in a baking dish and bake for approximately 25 minutes.
- Remove from the oven and let it cool before serving.
Notes
- Optionally, soften the peppers in the oven for 5 minutes before filling.
- Garnish with fresh herbs or toppings like cheese or sour cream if desired.
