- 3 small zucchinis, cut into 3-inch sticks
- 2 eggs
- 1 pinch salt
- 3 dashes ground black pepper
- 2 cups Japanese panko bread crumbs
- ½ cup grated Parmesan cheese
- Ranch dressing (for dipping)
Instructions
- Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
- In a bowl, beat the eggs with salt and black pepper. On a large plate or container, mix the panko breadcrumbs with Parmesan cheese.
- Working in batches, dip the zucchini strips into the beaten eggs, then roll them in the panko-Parmesan mixture, pressing gently to coat well.
- Place the coated zucchini fries on the lined baking sheet and bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Enjoy immediately with ranch dressing or your favorite dipping sauce!
