Ingredients
2 large sweet potatoes, peeled and cut into cubes
3 tablespoons of grated Parmesan cheese
2 tablespoons of olive oil
3 garlic cloves, minced
1 tablespoon of Italian seasoning
1/2 teaspoon of salt
1/4 teaspoon of pepper
1/4 teaspoon of paprika
Instructions
Preheat the oven to 400 degrees F (200 degrees C).
In a large bowl, combine sweet potatoes, Parmesan cheese, olive oil, garlic, Italian seasoning, salt, pepper, and paprika. Toss to coat.
Spread the sweet potatoes in a single layer on a baking sheet.
Bake in the preheated oven until sweet potatoes are tender and golden brown, about 30 minutes.
Notes
For a vegan version, use a plant-based Parmesan alternative.
Adjust seasoning according to taste, adding more or less as preferred.
