A delicious and healthy Low Carb Blackberry Cottage Cheese Chicken Salad, perfect for a quick meal or snack.
Ingredients

- 2 Chicken Breasts
- 1 cup Cottage Cheese
- 1/4 cup Mayonnaise
- 2 Celery Stalks diced
- 2 Green Onions Sliced
- 1/2 cup Blackberries (Sliced in half or quarters, depending on size)
- 1/2 tsp Salt and Pepper
- 1/4 cup Chopped Walnuts
- Keto Bread optional
Instructions
- Cook chicken based on your preference (Baked, boiled, grilled). Once cooked through, shred and chop into bite-sized pieces. Set aside to cool.
- Chop celery and onions.
- In a large bowl, combine the shredded chicken, celery, onions, blackberries and walnuts.
- Stir in the cottage cheese and mayo. Mix well.
- Season with salt and pepper.
- Serve as is, or on your favorite keto bread.
