Description

A flavorful and nutritious Onion and Egg Mushroom Wrap, perfect for breakfast, lunch, or a snack.


Ingredients

Scale
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 3 mushrooms sliced
  • 1 small onion julienned
  • Salt to taste
  • Black pepper to taste
  • 2 eggs beaten
  • 2 tbsp fresh parsley chopped
  • 50g mozzarella grated
  • 1 tortilla wrap

Instructions

  1. Heat butter and olive oil in a pan over low heat.
  2. Add the julienned onion and sliced mushrooms.
  3. Cover with a lid and cook until soft, stirring occasionally.
  4. Season with salt and black pepper.
  5. Pour the beaten eggs over the onion and mushroom mixture.
  6. Sprinkle the chopped parsley on top.
  7. Place the tortilla wrap over the eggs and cover the pan with a lid.
  8. Once the eggs are set, carefully flip everything so the tortilla is now on the bottom.
  9. Sprinkle grated mozzarella and a few parsley leaves on top.
  10. Fold the wrap in half and let it cook for another minute until the cheese melts.
  11. Remove from the pan and serve warm.

Notes

  • Feel free to add other vegetables or proteins to customize your wrap.
  • This recipe can be made vegetarian by omitting the cheese or using a vegan alternative.
