- 4 large russet potatoes, scrubbed and sliced into 1/4 inch rounds
- 1/3 cup olive oil
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh thyme leaves, or 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- Sprigs of fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Toss the potato rounds in olive oil until well-coated and lay them out in a single layer on a baking sheet lined with parchment paper.
- Combine the Parmesan cheese, thyme, garlic powder, salt, and pepper in a small bowl.
- Sprinkle the cheese mixture liberally over each potato round.
- Bake for about 20-25 minutes, turning halfway through, until golden and crispy.
- Let cool slightly, then transfer to a serving platter and garnish with fresh parsley.
Notes
- Make sure the potatoes are in a single layer to avoid steaming.
