Ingredients

  • 1 cupold-fashioned oats
  • 3/4 cupall-purpose flour (or gluten-free flour blend)
  • 1/3 cuplight brown sugar
  • 1/4 teaspoonbaking soda
  • 1/4 teaspoonsalt
  • 1/2 teaspooncinnamon (optional)
  • 6 tablespoonsunsalted butter, melted (or coconut oil)
  • 1 teaspoonvanilla extract
  • 1 cupblueberries (fresh or frozen)
  • 1/4 cupgranulated sugar
  • 2 teaspoonscornstarch

    Preheat your oven to 375°F (190°C). Line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal later.

    In a large bowl, combine the oats, flour, brown sugar, baking soda, salt, and cinnamon (if using). Mix well to evenly distribute all the dry ingredients.

    Stir in the melted butter and vanilla extract until the mixture is crumbly. This will form the base of your bars.

    Press half of the oat mixture firmly into the bottom of the prepared pan to form a solid base.

    In a separate bowl, toss the blueberries with granulated sugar and cornstarch, then spread this mixture evenly over your oat base.
