- 1 lb lean ground beef
- 1/2 yellow onion chopped
- 2 cloves garlic minced
- 2 15 oz cans tomato sauce
- 1 teaspoon Italian seasoning
- 8 oz egg noodles
- 1 cup sour cream
- 1 cup cottage cheese
- 1 cup cheddar cheese grated
- Kosher salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 350°F and grease a 9×13-inch baking dish with nonstick spray.
- In a large skillet over medium-high heat, cook the ground beef and onion until browned, about 10 minutes. Add garlic and cook for an additional minute.
- Stir in the tomato sauce and Italian seasoning, simmer for 5 minutes, and season with salt and pepper to taste. Remove from heat.
- Cook the egg noodles according to the package instructions in salted boiling water. Drain and set aside.
- In a large mixing bowl, combine sour cream and cottage cheese. Add cooked egg noodles and season with salt and pepper, stirring until combined.
- Spread half of the egg noodle mixture into the baking dish. Top with half of the meat sauce. Repeat with remaining egg noodles and meat sauce.
- Sprinkle cheddar cheese over the top. Bake for 30 minutes until bubbly and cheese is melted.
- Let the casserole cool for 10 minutes before serving.
