Instructions

  1. Preheat and Prepare: Start by preheating your oven to 400˚F. Lightly coat a baking sheet with olive oil or non-stick spray.
  2. Grate and Drain Zucchini: Use a box grater to grate the zucchini into a clean towel. Roll up the towel and twist to wring out as much moisture as possible.
  3. Grate Garlic: Use the small holes on the box grater to grate the garlic finely.
  4. Combine Ingredients: In a medium bowl, mix the shredded zucchini, grated garlic, egg, breadcrumbs, Parmesan, chives, parsley, basil, oregano, salt, and pepper until well combined.
  5. Form Zucchini Balls: Take a tablespoon of the mixture, shape it into small balls, and place them on the prepared baking sheet.
