Method
- Preheat the oven to 400 degrees. Lightly spray a large sheet pan with non-stick cooking spray. Set aside.
- In a small bowl, mix together paprika, garlic salt, onion powder, parsley, and ground pepper. Divide into two portions.
- In a mixing bowl, combine potatoes, 2 tablespoons parmesan cheese, 1 tablespoon olive oil, 1 tablespoon minced garlic, and 1 tablespoon of the spice mixture. Mix to coat evenly.
- Pour the potato mixture onto one side of the prepared sheet pan. Roast for 15 minutes.
- Meanwhile, combine chicken with remaining olive oil, 2 tablespoons parmesan cheese, 1 tablespoon minced garlic, and the remaining spice mixture. Mix to coat evenly.
- After 15 minutes, add the seasoned chicken to the other side of the pan. Return to the oven and cook for an additional 20 minutes.
- Remove from oven and let cool for 5-10 minutes before serving.
