Ingredients
  

  • 1/2 cup butter for batter
  • 2 cups powdered sugar for icing
  • 1 teaspoon vanilla extract for icing
  • tablespoons milk for icing
  • ¾ cup sugar for batter
  • ½ cup sour cream
  • ¼ cup butter softened, for batter
  • 1 large egg
  • 1 cup very ripe bananas mashed
  • 1 teaspoon vanilla extract for batter
  • 1 cup all purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Method
 

  1. Preheat the oven to 375F and line an 8x8 baking dish with parchment paper.
  2. In a large bowl, beat together sugar, sour cream, butter, and eggs until creamy. Blend in mashed bananas and vanilla extract.
  3. Add flour, baking soda, and salt. Stir until just combined and spread the batter evenly into the pan.
  4. Bake for 20 to 25 minutes or until golden brown. Let cool slightly and remove from the pan using the parchment.
  5. Brown the butter in a medium saucepan over medium-high heat until brown bits form. Pour into a heat-proof bowl.
  6. Whisk in powdered sugar and vanilla until smooth.
  7. Spread the icing on the bars once they have cooled for 10-15 minutes.

Notes

These banana bars are best enjoyed slightly warm with the brown butter icing for a melt-in-your-mouth experience.
