BBQ Chicken Pizza

Homemade BBQ chicken pizza with tangy BBQ sauce, chicken, and a mix of mozzarella and smoked gouda cheese, topped with red onion and fresh cilantro.

Ingredients
  

Pizza Dough
  • 1/2 recipe homemade pizza dough or 1 lb. store-bought pizza dough
  • 1 Tablespoon olive oil divided
  • 1 Tablespoon cornmeal
  • 1/3 cup + 2 Tablespoons cup barbecue sauce your favorite
  • 1 cup chopped or shredded cooked chicken about one 8-ounce breast
  • 2/3 cup shredded mozzarella cheese
  • 2/3 cup shredded smoked gouda cheese
  • 1/2 small red onion thinly sliced
  • 1 Tablespoon chopped fresh cilantro for topping, or use basil

  • 1 Pizza Stone (optional)

Method
 

  1. Prepare pizza dough through step 3. If using store-bought frozen pizza dough, make sure it’s thawed.
  2. Preheat oven to 475°F (246°C) and allow to heat for at least 15–20 minutes.
  3. On a floured surface, form dough into a 12-inch circle, and push dents into the surface to prevent bubbling.
  4. Brush dough with olive oil, spread BBQ sauce, scatter cooked chicken, top with cheese and red onion.
  5. Bake for 14–15 minutes or until crust is golden brown. Remove and sprinkle with cilantro.
  6. Slice and serve hot, store leftovers in the fridge for up to 5 days.

Notes

You can freeze half the pizza dough for another time or double the toppings for two pizzas.
