Method
- Preheat oven to 400°F. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Grate the cold butter using a cheese grater. Blend the grated butter in with the flour mixture using a pastry cutter or 2 knives until clumpy.
- Mix in the cheese and chives, then add the buttermilk and mix until JUST incorporated. Do NOT over mix.
- Knead the dough briefly, shape into a circle about 1 1/2 inches thick, and cut into wedges.
- Put the wedges on a baking sheet, brush tops with buttermilk, and bake for 20-22 minutes until golden brown.
- Cool on a wire rack.
