Crispy Parmesan Roasted Potatoes

Ingredients
  

  • 1 ½ pounds baby gold potatoes halved lengthwise
  • 1 tablespoon salted butter melted
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 1 teaspoon kosher salt
  • freshly ground black pepper to taste
  • 2 tablespoons salted butter melted
  • ½ cup pre-grated store-bought Parmesan cheese about 2 ounces
  • 1 lemon zested
  • 1 to 2 tablespoons fresh parsley finely chopped
  • 1 to 2 tablespoons fresh dill finely chopped
  • Flaky sea salt for sprinkling

Method
 

  1. Preheat the oven to 400 degrees F.
  2. In a large bowl, add the halved potatoes, then pour over the melted butter, garlic powder, dried oregano, salt, and black pepper. Gently toss until well coated.
  3. In a 9x13 inch glass baking dish, add the melted butter and spread it evenly over the bottom. Sprinkle with grated Parmesan cheese.
  4. Place potatoes cut-side down onto the cheese in a single layer. Roast for 35 to 40 minutes until fork-tender and the cheese is golden brown.
  5. Optional: Spread roasted garlic feta dip on the bottom of a platter, then flip the potatoes onto it. Garnish with lemon zest, fresh herbs, and sprinkle with flaky sea salt.

Notes

Serve with roasted garlic feta dip for an enhanced flavor.
