Ingredients
  

  • 3 small zucchinis cut into 3-inch sticks
  • 2 eggs
  • 1 pinch salt
  • 3 dashes ground black pepper
  • 2 cups Japanese panko bread crumbs
  • ½ cup grated Parmesan cheese
  • Ranch dressing for dipping

Method
 

  1. Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. In a bowl, beat the eggs with salt and black pepper. On a large plate or container, mix the panko breadcrumbs with Parmesan cheese.
  3. Working in batches, dip the zucchini strips into the beaten eggs, then roll them in the panko-Parmesan mixture, pressing gently to coat well.
  4. Place the coated zucchini fries on the lined baking sheet and bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  5. Enjoy immediately with ranch dressing or your favorite dipping sauce!

  • For added flavor, consider seasoning the panko with garlic powder or Italian herbs.
