Crostoli Recipe

Crostoli are crispy fried Italian pastries, popular during Carnevale and Christmas.

Ingredients
  

  • 2 cups plain all purpose flour
  • 2 whole eggs
  • 1 whole egg yolk
  • 2 tablespoons granulated white sugar
  • 2 tablespoons butter
  • 1 tablespoon brandy
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups peanut oil for frying
  • powdered sugar for dusting

Method
 

  1. Place the flour on a clean work surface and make a well in the center. Add the eggs, yolk, sugar, butter, brandy, vanilla, and salt. Blend with fingers until dough forms.
    2 whole eggs, 1 whole egg yolk, 2 tablespoons granulated white sugar, 2 tablespoons butter, 1 tablespoon brandy, 1 teaspoon vanilla extract, ¼ teaspoon salt, 2 cups peanut oil for frying
  2. Knead the dough for about 5 minutes until smooth and elastic. Rest for 30 minutes.
  3. Work the dough through a pasta machine until it is thin, cut into strips, and twist each piece.
  4. Heat oil in a frying pan and fry crostoli until golden. Drain and dust with powdered sugar.

Notes

Store in an airtight container for two weeks.
