Ingredients

  • 1/2 cup Panko bread crumbs
  • 1 tbsp butter
  • 2 cups sour cream
  • 4 oz cream cheese, softened
  • 1 packet ranch seasoning (about 1 oz, or 2 tbsp)
  • 1 tbsp lemon juice
  • 3 tbsp dill pickle juice
  • 1.5 cups dill pickled, chopped
  • 2 cloves garlic, crushed
  • 1 tbsp fresh chives, minced
  • 1 tbsp fresh dill, minced
  • salt and pepper (to taste)
  • hot sauce (optional, to taste)

Method

  1. Melt 1 tbsp of butter in a frying pan over medium high heat. Add Panko bread crumbs and toast, stirring frequently, for a couple of minutes until crisp and golden brown. Remove from heat and pour into a small bowl to cool. Set aside.
  2. In a mixing bowl add sour cream, softened cream cheese, ranch seasoning, pickle juice and lemon juice with a few drops of hot sauce (optional). Blend until well combined.
  3. Add chopped pickles, garlic, dill, and chives. Stir to combine and taste for seasoning.
  4. Spoon half of the mixture into a serving dish. Sprinkle half of the toasted bread crumbs on top. Add remaining mixture and top with remaining crumbs. Serve with potato chips, pita chips, or fresh veggies.
