Gingerbread Biscotti

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup light brown sugar
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 tsp baking powder
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ cup semi-sweet chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, ginger, cinnamon, nutmeg, and brown sugar.
  3. In another bowl, whisk eggs and vanilla until smooth. Gradually combine with dry ingredients until just mixed; do not overmix.
  4. Fold in chocolate chips gently.
  5. Shape the dough into two logs (12 inches long by 3 inches wide) on the baking sheet.
  6. Bake for 25-30 minutes until golden brown. Cool slightly before slicing diagonally into 1-inch pieces.
  7. Arrange slices cut-side down on the baking sheet and bake again for another 10-15 minutes until crispy.

Customize your biscotti by adding nuts or experimenting with spices like cardamom for unique flavor combinations. Store in an airtight container at room temperature for up to two weeks or freeze for up to three months.
