Greek Lemon Chicken Soup

A light and healthy Greek Lemon Chicken Soup, perfect for warm autumn evenings!

Ingredients
  

  • 10 cups chicken broth
  • 3 tablespoons olive oil
  • 8 cloves garlic (minced)
  • 1 large sweet onion
  • 1 large lemon (zested)
  • 2 pieces boneless skinless chicken breasts
  • 1 cup Moroccan couscous (pearl)
  • 1/2 teaspoon crushed red pepper
  • 2 ounces crumbled feta
  • 1/3 cup chopped chive
  • to taste Salt and pepper

Method
 

  1. Place the olive oil in a large sauce pot over medium-low heat. Peel the onion, quarter it, and slice into thin strips. Sauté the onion and minced garlic for 3-4 minutes.
    3 tablespoons olive oil, 8 cloves garlic (minced), 1 large sweet onion, 1 large lemon (zested)
  2. Add chicken broth, chicken breasts, lemon zest, and crushed red pepper. Bring to a boil, then reduce heat and simmer for 5 minutes.
    2 pieces boneless skinless chicken breasts, 1 cup Moroccan couscous (pearl), 1/2 teaspoon crushed red pepper
  3. Stir in couscous, salt, and pepper. Simmer another 5 minutes.
    2 ounces crumbled feta
  4. Remove chicken breasts, shred, and return to soup. Stir in feta and chives, season to taste.
    1/3 cup chopped chive, to taste Salt and pepper
  5. Serve warm.
