- Place the olive oil in a large sauce pot over medium-low heat. Peel the onion, quarter it, and slice into thin strips. Sauté the onion and minced garlic for 3-4 minutes.3 tablespoons olive oil, 8 cloves garlic (minced), 1 large sweet onion, 1 large lemon (zested)
- Add chicken broth, chicken breasts, lemon zest, and crushed red pepper. Bring to a boil, then reduce heat and simmer for 5 minutes.2 pieces boneless skinless chicken breasts, 1 cup Moroccan couscous (pearl), 1/2 teaspoon crushed red pepper
- Stir in couscous, salt, and pepper. Simmer another 5 minutes.2 ounces crumbled feta
- Remove chicken breasts, shred, and return to soup. Stir in feta and chives, season to taste.1/3 cup chopped chive, to taste Salt and pepper
- Serve warm.
