Grilled Baby Bok Choy with Ginger Chili Sauce

A light and healthy side of grilled baby bok choy drizzled with a flavorful ginger chili sauce, perfect with grilled meats or seafood.

Ingredients
  

  • 3 pieces baby bok choy halved
  • olive oil spray
  • freshly ground black pepper
  • 1 tablespoon low-sodium soy sauce or tamari if gluten free
  • 1 tablespoon grated fresh ginger paste
  • 1/2 teaspoon chili paste (sambal oelek)

Method
 

  1. Cut the baby bok choy in half lengthwise and rinse under the faucet to clean. Shake excess water and pat dry.
  2. Spray the cut side with olive oil and sprinkle with black pepper.
  3. In a bowl, combine ginger, chili paste, and soy sauce. Stir to combine.
  4. Preheat grill to medium-high. Place bok choy cut-side down on hot side of the grill.
  5. Grill for 45 seconds to 1 minute, turn, and grill for another 45 seconds. Move to cooler side of grill and cover until stalks are tender.
  6. Transfer to a platter and drizzle with ginger chili sauce. Serve immediately.

Notes

Serve as a light side dish to grilled chicken, beef, or seafood.
