- Thread the halloumi pieces, apricot halves, and onion wedges onto skewers. Brush with a mixture of olive oil, honey, and chilli flakes. Season with salt and pepper.
- Cook on the barbecue over direct heat for 10-12 minutes, turning and brushing with more glaze as necessary.
- Toast the pistachios in a small roasting tin alongside the skewers.
- Chop the toasted pistachios, drizzle the skewers with remaining honey, and sprinkle with the chopped pistachios.
