Preheat the oven to 350°F (175°C).
Cut the bell peppers in half, removing the seeds and membranes.
In a pan over medium heat, brown the ground beef until fully cooked. Add the chopped onion and sauté until the onion is translucent.
Add garlic powder, salt, and pepper to the beef and onion mixture. Stir well.
Add the cubed cream cheese to the beef mixture and stir until melted and incorporated.
Pour the can of Rotel into the pan and let it simmer until heated through.
Spoon the cream cheese and beef mixture into the halved bell peppers.
Place the stuffed peppers in a baking dish and bake for approximately 25 minutes.
Remove from the oven and let it cool before serving.
