Method
- Cook chicken based on your preference (Baked, boiled, grilled). Once cooked through, shred and chop into bite-sized pieces. Set aside to cool.
- Chop celery and onions.
- In a large bowl, combine the shredded chicken, celery, onions, blackberries and walnuts.
- Stir in the cottage cheese and mayo. Mix well.
- Season with salt and pepper.
- Serve as is, or on your favorite keto bread.
