Preheat your oven to 350°F and grease a 9x13-inch baking dish with nonstick spray.
In a large skillet over medium-high heat, cook the ground beef and onion until browned, about 10 minutes. Add garlic and cook for an additional minute.
Stir in the tomato sauce and Italian seasoning, simmer for 5 minutes, and season with salt and pepper to taste. Remove from heat.
Cook the egg noodles according to the package instructions in salted boiling water. Drain and set aside.
In a large mixing bowl, combine sour cream and cottage cheese. Add cooked egg noodles and season with salt and pepper, stirring until combined.
Spread half of the egg noodle mixture into the baking dish. Top with half of the meat sauce. Repeat with remaining egg noodles and meat sauce.
Sprinkle cheddar cheese over the top. Bake for 30 minutes until bubbly and cheese is melted.
Let the casserole cool for 10 minutes before serving.
