Ingredients
  

  • 4 large russet potatoes scrubbed and sliced into 1/4 inch rounds
  • 1/3 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • Sprigs of fresh parsley for garnish optional

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Toss the potato rounds in olive oil until well-coated and lay them out in a single layer on a baking sheet lined with parchment paper.
  3. Combine the Parmesan cheese, thyme, garlic powder, salt, and pepper in a small bowl.
  4. Sprinkle the cheese mixture liberally over each potato round.
  5. Bake for about 20-25 minutes, turning halfway through, until golden and crispy.
  6. Let cool slightly, then transfer to a serving platter and garnish with fresh parsley.

Notes

  • Make sure the potatoes are in a single layer to avoid steaming.
  • Adjust cooking time based on the thickness of the potato slices.
