Pineapple Fritters w/ Maui Mango Sauce

Delicious deep-fried pineapple fritters served with a sweet mango sauce.

Ingredients
  

  • 6 ounces Mango sliced
  • 3.5 ounces Sugar
  • 0.5 ounces Lemon Juice
  • 1.5 ounces Panko
  • 1 ounce Graham crackers crumbs
  • 0.5 teaspoon Cinnamon
  • 1 whole Pineapple 1/4" thick slices
  • 2 tablespoons Flour
  • 1 whole Egg beaten with 1 tbsp water
  • 5.25 ounces Sugar
  • Vegetable Oil for frying

Method
 

  1. Puree mango for the sauce. Pass through sieve.
  2. Add sugar and lemon juice. Set aside.
  3. Mix panko, graham crumbs, and cinnamon.
  4. Dip pineapple slices, first into flour, then egg, then panko.
  5. Heat oil to 350°F.
  6. Deep-fry pineapple slices.
  7. Sprinkle with sugar, serve with mango sauce.
