Simple Carrot Nectarine Salad

Ingredients
  

  • 6 medium carrots (about 2 cups shredded)
  • 2 medium nectarines (diced)
  • 1 bunch cilantro (chopped)
  • ¼ cup lime or lemon juice
  • 1 tablespoon olive oil
  • 1 pinch cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup toasted cashews (chopped)

Method
 

  1. Combine all the ingredients except for the toasted cashews in a medium salad bowl and toss well.
  2. Garnish with the cashews and serve. You can keep leftovers for up to 2 days.

This salad is quick to make and stores well for up to two days.
