Vegan Chocolate Brownie Sundae

Ingredients
  

  • 3 scoops So Delicious Dark Chocolatey Truffle Cashewmilk Frozen Dessert
  • vegan brownie chunks
  • coconut whip
  • chocolate shavings
  • fresh pitted cherries
  • waffle bowls store-bought - optional

Method
 

  1. Preheat the oven to 325°F. Line a non-stick loaf pan with parchment paper and spray the bottom with non-stick cooking spray.
  2. In a stand mixer, beat the aquafaba and brown sugar on high until thick, shiny, and voluminous.
  3. Melt the chocolate and coconut oil together in a double boiler, then let it cool slightly.
  4. Sift the flour, cocoa, sea salt, and baking soda together.
  5. Fold the melted chocolate into the whipped aquafaba/sugar mixture, followed by the dry ingredients.
  6. Pour the mixture into the prepared loaf pan and bake for 20 minutes.
  7. To make the coconut whip, scoop chilled coconut cream into a bowl, add sugar and cream of tartar, and whip until fluffy.
  8. Spoon 3 scoops of the frozen dessert into a bowl and top with brownie chunks, coconut whip, chocolate shavings, and cherries.
