Ingredients

  • 1 lb. bone-in chicken thighs
  • 2 teaspoons garlic powder
  • 1/4 teaspoon chipotle powder
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon paprika
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/4 - 1/3 cup BBQ sauce your favorite kind

Method

  1. Begin by patting each chicken thigh with a paper towel to remove excess moisture.
  2. Mix garlic powder, chipotle powder, chili powder, paprika, black pepper, and salt in a small bowl.
  3. Pour spices over the chicken thighs and massage to coat evenly.
  4. Let chicken sit for at least 30 minutes to absorb flavors.
  5. Preheat grill to 400ºF with direct and indirect grilling space.
  6. Grill chicken skin side down over direct heat for 4-5 minutes.
  7. Flip chicken and cook for another 4-5 minutes.
  8. Flip one more time (skin up) and move to indirect heat.
  9. Add BBQ sauce to each chicken thigh and close the grill, cooking for 2-3 more minutes.
  10. Remove thighs from the grill, let rest for 5 minutes, and enjoy with more BBQ sauce.

Notes

Letting the chicken sit with spices longer will enhance the flavor.
