Greek Zucchini Fritters Recipe

These zucchini fritters are light and crispy, perfect as a starter, side dish, or vegetarian entree.

Ingredients
  

  • 1.5 lbs zucchini (about 4 medium zucchini)
  • 1 tsp salt
  • 0.5 cup chopped green onion (or sub 1/4 cup shredded white onion)
  • 0.25 cup fresh dill (or sub flat leaf parsley)
  • 0.5 cup crumbled feta cheese
  • 1 large egg
  • 0.5 cup all-purpose flour (or gluten free flour blend)
  • 0.5 tsp baking powder
  • 0.25 tsp fresh nutmeg
  • 0.25 tsp salt
  • 0.25 tsp pepper to taste
  • 1 tsp lemon zest optional
  • 2 tbsp olive oil

Method
 

  1. Grate the zucchini and sprinkle with salt, letting it sit for 15-20 minutes.

  2. Press down on the salted zucchini to remove excess water.

  3. Combine grated zucchini with remaining ingredients in a bowl.

  4. Drop spoonfuls into a hot skillet and cook until golden brown on both sides.

  5. Serve warm with tzatziki sauce.

Notes

These fritters can also be frozen for later use.
