Ingredients

  • 2 pieces T-bone steaks (about 1-1 1/4 inch thick)
  • 1-1.5 teaspoons smoked salt (or substitute Kosher salt)
  • ¾ teaspoon cracked black pepper
  • 4 Tablespoons cowboy butter (for finishing)

Equipment

  • 1 Grill Gas or charcoal

Method

  1. Remove the steak from the fridge 30 minutes to 1 hour before grilling. Sprinkle generously with salt and pepper on both sides and let rest at room temperature.
  2. Clean and oil your grill grates, preheating the grill to high heat.
  3. Place steaks over direct heat, searing for 1-1.5 minutes, then turning for grill marks. Flip and repeat until desired doneness.
  4. Plate the steaks, top with Cowboy Butter, tent with foil, and let rest for 7-10 minutes before slicing.

Notes

This method also works well for porterhouse steaks!
