Picnic Cake

Ingredients
  

  • 1 cup chopped dates
  • 1.5 cups boiling water
  • 1 tsp baking soda
  • 3/4 cup shortening
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 2 units eggs
  • 1.75 cups flour
  • 1/2 tsp salt
  • 1 cup brown sugar
  • 1 cup chocolate chips (I use milk)

Method
 

  1. Combine dates, boiling water, and baking soda. Stir well and set aside to cool.
  2. In a mixing bowl, cream shortening and sugar. Add eggs and vanilla. Mix well. Stir in cooled date mixture. Add cinnamon, flour, and salt and mix until well combined.
  3. Pour into a greased 9x13 pan.
  4. Sprinkle brown sugar and chocolate chips evenly over the top. Bake at 350 degrees for 35-40 minutes.
