Strawberry Crumb Bars

These easy Strawberry Crumb Bars, with a buttery crust, sweet strawberry filling, and crunchy butter crumb topping, make wonderful dessert bars.

Ingredients
  

  • 0.5 cup white sugar
  • 0.5 teaspoon baking powder
  • 1.5 cups all-purpose flour
  • 0.25 teaspoon salt
  • 0.5 cup very cold butter (8 Tablespoons or 1 stick)
  • 1 large egg (beaten)
  • 1 teaspoon vanilla
  • 2 cups fresh strawberries (chopped)
  • 0.33 cup white sugar
  • 2 teaspoons cornstarch

Method
 

  1. Preheat the oven to 375 degrees F. Place parchment paper on the bottom of the 8x8 pan that hangs over the side of the pan.
  2. In a medium bowl, stir together 1/2 cup white sugar, flour, baking powder and salt.
  3. Using a fork or a pastry cutter, cut the butter into the flour mixture until crumbly.
  4. In a separate bowl, beat an egg and add it along with vanilla to the flour mixture.
  5. Pat half of the dough evenly into the bottom of the prepared pan.
  6. In another bowl, stir together 1/3 cup sugar and cornstarch, then stir in strawberries.
  7. Spoon the strawberry mixture over the bottom crust and crumble the remaining dough on top.
  8. Bake for 45 minutes or until golden brown. Cool completely before cutting, refrigerate until ready to serve.
